Recipe : Quinoa Noodle Soup

Quinoa noodles soup

Ingredients:

  • ½ packet Quinoa Noodles
  • 1 tbsp sesame oil
  • ½ cup chopped cabbage
  • ½ cup chopped carrots
  • 1 tsp chopped ginger
  • 1 tsp chopped garlic
  • 3 cups of water
  • Salt to taste
  • ½ tsp of black pepper powder
  • 1 tsp vinegar

Instructions:

  1. Boil Quinoa Noodles as per the instructions on the pack.
  2. Strain the Quinoa Noodles and keep aside.
  3. In a wok heat 1 tbsp of sesame oil.
  4. Next add in 1 tsp each of chopped ginger and garlic.
  5. Toss for 30 seconds.
  6. Thereafter add in ½ cup of chopped carrots. Cook for 2 minutes on a high flame.
  7. Next add in ½ cup of chopped cabbage and toss it for a minute. You can increase or decrease the quantity of vegetables used. Also you can add in other vegetables of your choice.
  8. Add in 3 cups of water.
  9. Let it simmer.
  10. Add in the boiled Quinoa Noodles.
  11. Season the soup with some salt, black pepper and vinegar. You can also add in soya sauce and chilli sauce. I like my soup mild and therefore I have not added the same.
  12. Serve hot.
