Peanut Butter Satay Broth Bowl 🍜

A comforting, flavour-packed bowl made with Naturally Yours Black Rice Noodles, tossed into a creamy peanut-satay broth and topped with crunchy garnishes.

Difficulty: Easy Time: ~15–20 mins Serves: 2

Ingredients

  • 1 pack Naturally Yours Black Rice Noodles
  • 2–3 cloves garlic (minced)
  • ½ tbsp ginger (finely chopped)
  • 1 medium onion (thinly sliced)
  • ¼ cup green onion (chopped)
  • 1 cup thinly sliced carrot / red-yellow capsicum / veggies of your choice
  • 2 cups vegetable broth (or plain water)
  • 2 tbsp peanut butter
  • ½ tbsp lemon juice
  • ½ tbsp chilli garlic sauce
  • 1 tbsp soya sauce
  • ½ tbsp coconut sugar
  • 2 tbsp neutral oil
  • ½ tbsp chilli oil
  • Salt to taste
  • 2 tbsp fried garlic & peanuts (to garnish)
  • Sesame seeds & fresh coriander to garnish

Chef Tip: If your peanut butter is thick, mix it with 2–3 tbsp warm broth in a small bowl first, then add it to the wok for a smoother, creamier soup.

Instructions

  1. Cook the noodles as per the instructions given on the pack. Drain and keep aside.
  2. Heat neutral oil in a wok. Sauté onions first, then add ginger and garlic. Sauté for 2 minutes.
  3. Add soya sauce, chilli-garlic sauce, peanut butter, and coconut sugar. Mix well and cook for 1 minute.
  4. Pour in vegetable broth (or water). Let it simmer for a few minutes.
  5. Add salt to taste and finish with lemon juice.
  6. To serve: Add boiled noodles to a bowl, pour the hot satay broth over it, and top with veggies, fried garlic, fried peanuts, sesame, green onion, coriander, and a drizzle of chilli oil.
