Gluten-Free Multi Grain Pasta Soup

Multigrain pasta soup

Ingredients : 

  • 1/2 pack Naturally yours gluten free multi grain pasta.
  • 2 tbsp oil.
  • 1 medium size onion finely chopped.
  • 2-3 cloves of garlic(minced).
  • 3 tbsp boiled sweet corn.
  • 3 tbsp carrot finely chopped.
  • 3 tbsp zucchini finely chopped.
  • 4 button mushrooms finely sliced.
  • 1/4 beetroot, boiled and roughly chopped.
  • 4 tomatoes, blanched and roughly chopped.
  • 1 tsp dried/ fresh thyme.
  • Salt & pepper to taste.
  • 1 tbsp Italian seasoning. 
  • 4 cups water + more for boiling pasta

Instructions : 

  1. Boil the pasta as per the instructions given on the pack.
  2. Make a puree of tomatoes & beetroot. 
  3. Heat oil in a deep saucepan, add onion & garlic.
  4. Saute for a minute then add carrot, zucchini, mushrooms & sweetcorn.
  5. Cook the veggies on a medium flame for a minute then add salt and pepper.
  6. Mix well and add the tomato puree. Now let the tomato puree cook for a couple of minutes then add water. 
  7. Let it cook covered on a low flame for 8-10 minutes. 
  8. Open the lid, add Italian seasoning, thyme & pasta. Let it boil for another minute then finish it off with fresh parsley.
  9. Serve hot with garlic bread. 
Note: adjust the consistency of soup as per your liking.
