Gluten-Free Multi Grain Pasta Soup
Ingredients :
- 1/2 pack Naturally yours gluten free multi grain pasta.
- 2 tbsp oil.
- 1 medium size onion finely chopped.
- 2-3 cloves of garlic(minced).
- 3 tbsp boiled sweet corn.
- 3 tbsp carrot finely chopped.
- 3 tbsp zucchini finely chopped.
- 4 button mushrooms finely sliced.
- 1/4 beetroot, boiled and roughly chopped.
- 4 tomatoes, blanched and roughly chopped.
- 1 tsp dried/ fresh thyme.
- Salt & pepper to taste.
- 1 tbsp Italian seasoning.
- 4 cups water + more for boiling pasta
Instructions :
- Boil the multi grain pasta as per the instructions given on the pack.
- Make a puree of tomatoes & beetroot.
- Heat oil in a deep saucepan, add onion & garlic.
- Saute for a minute then add carrot, zucchini, mushrooms & sweetcorn.
- Cook the veggies on a medium flame for a minute then add salt and pepper.
- Mix well and add the tomato puree. Now let the tomato puree cook for a couple of minutes then add water.
- Let it cook covered on a low flame for 8-10 minutes.
- Open the lid, add Italian seasoning, thyme & multi grain pasta. Let it boil for another minute then finish it off with fresh parsley.
- Serve hot with garlic bread.
Note: adjust the consistency of soup as per your liking.
