Glazed mushroom & broccoli soba noodles

SAUCE:
2 tbsp low sodium soy sauce
1 tbsp olive oil
1 tbsp toasted sesame oil
1 tsp grated ginger
1 tsp gochujang (optional)
½ squeezed lemon
1️⃣Mix the ingredients for sauce and keep aside.
MUSHROOM GLAZING:
200 gms mushroom
1 tbsp low sodium soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tbsp gochujang (optional)
1 tsp grated ginger
Oil for the pan
2️⃣Mix mushroom with all the ingredients for glazing. Add oil to a hot pan and add the mushroom mix. Cover the pan. Let it cook for 6-7 mins. Keep aside
SOBA AND VEGETABLES:
1 packet buckwheat noodles
2-3 garlic cloves
8 broccoli florets
5 stalks kale/spinach
Olive oil
3️⃣In a pan take oil, garlic, broccoli and spinach/kale. Stir fry for a few mins.
4️⃣Cook the buckwheat noodles as per the package instructions. We like to boil it for exactly 5 mins and then pour cold running water over cooked noodles to remove the starch.
5️⃣Mix the sauce in the noodles, add stir fried veggies and top it with glazed mushroom.
Top the dish with toasted sesame, green onion, red chilli and enjoy the goodness.
