Recipe : Banana flour cashew cookies

Ingredients

Raw banana flour - 3/4 cup

Whole wheat flour - 1/4 cup

Jaggery powder - 3/4 cup

Ghee - 1/2 cup

Cashew - 5 or 6 (roughly broken into small bits)

Cinnamon powder - 1/4 tsp (optional)

Preparation

  • Pre-heat oven to 180 C degrees. Use the convection mode, if using a microwave. Line a baking sheet with parchment paper and set aside.
  • In a large bowl mix together ghee and jaggery powder. Whisk to combine. 
  • Add banana flour, whole wheat flour, cinnamon powder and broken cashew bits to the ghee mixture. Mix well with your hand to form a dough.
  • Take small lemon sized balls and flatten them slightly. I got around 10 such cookies.
  • Transfer cookies to baking sheet lined with parchment paper. 
  • Bake at 180 C for 12-15 minutes until dark golden brown in color.
  • Let cool completely on a wire rack and then store in an airtight container. 
  • The cookies will be slightly crumbly and have deliciously chewy texture.

Notes

  1. You can also used chopped almond, chocolate chips, pistachio etc instead of cashew. 
  2. You can replace whole wheat flour with almond flour or amaranth flour to make it gluten free.
  3. The cookies will have a slight banana flavour but barely detectable due to jaggery's caramelized taste.
